The Ethos behind the list is purely good drinking. Understanding a wine list is capricious; you will see the constant changes throughout the year.

We have compiled the first draft particularly to fit The Plough, which is to show unusual wines from unusual places and the diversity of the appellations, areas and the individuality of each producer. There is one thing you can be sure, the growers and producers are small, producing limited quantities of the finest examples, some organic, some biodynamic, but all with integrity.

In Champagne, Armagnac, Cognac, and Calvados we have chosen artisan, small family names locally renowned, but otherwise not able to produce the volumes required to market, please be assured whilst value is paramount nothing has been purchased price consciously as nothing has been made with that in mind, what is in the bottle is more important than the label.

Sherry Emilia Lustau

Emilio Lustau have always placed absolute quality ahead of volume and supported small Almanistas in the quest to produce the finest sherry known to man. The amount of care in production and aging in solera is quite honestly unaffordable in any other region. These are listed from Nutty dryness to unctuously sweet- though there is no treacle here! 70ml.

Port Quinta De La Rosa

Family owned and run Quinta near Pinhao in the Cima Corgo, prime Port region of northern Portugal. These wines are truly concentrated; the balance of fortification is almost traceless on the palate. We start with an aperitif in white and tawny and build into dense Touriga with the Single Vineyard Val Do inferno and splendid 97 vintage. 70ml

Bas Armagnac Baron De Sigognac

Baron de Sigognac holds one of the most important stocks of old vintages in the whole Armagnac region. Also growers and distillers, owning a 10 ha estate near Eauze in the heart of the Sables Fauves which is typical of the best terroirs in the Bas Armagnac. 35cl

Cognac Maxime Trijol - Duboigalant

A family business since 1876, cognac Duboigalant(which means lovers lane) is exclusively made from grapes grown in the Grande Champagne area. Well known as a “bouilleur de cru” in cognac and distil for most of the main hoses. These Cognacs are handsome, rounded and well structured, with a fine and intense nose showing lots of maturity as you would expect from a house that releases late the V.S.O.P. is a minimum of 10 years old. 35cl

Calvados Berneroy

Distillers and eleveurs of fine calvodos, the distillery holds and matures a large stock of Calvados between 10 and 25 years old. Careful attention through the aging period produces very round and rich with hints of apple fruit and spice. 35cl
